Start chopping the kale then put them into a container or bowl. Then add in salt and squeeze a 1/2 lemon. 3. Cut your cucumber and capsicum into strips. Grate the carrot and chop the red cabbage, coriander, and mint leaves. 4. Drain the noodles. 5. Then make the peanut sauce. In a small bowl, add sweet chilli, and peanut butter powder. Then add a little bit of water and mix well. 6. For plating: Add all the chopped veggies and cooked noodles and edamame in a bowl then spread the peanut sauce on top.
